Spinach Pie

2 boxes frozen spinach
(11⁄2 lb. fresh) 1 large onion, chopped
2 tbsp. oil
4 eggs, beaten
3⁄4 lb. Muenster cheese, chopped or shredded
Salt and pepper to taste
9-inch prebaked pie crust (optional)


Thaw (or clean) and drain spinach. Sauté spinach and chopped onion in oil until cooked. Remove from heat. Add eggs, cheese, salt and pepper to the spinach and onions. Pour into a prebaked pie shell or a greased pie plate. Bake at 350 degrees for 35 minutes. Let set 5-10 minutes. Slice and serve.
