2 cups sugar
1/2 cup white corn syrup
1/2 cup of water
Juice and rind of 1 lemon
Place all ingredients in a saucepan. Boil without stirring until the crack stage or until a few drops become brittle in cold water. Remove from heat.
For Lemon Sticks: Add 1 teaspoon lemon extract. Pour onto a buttered surface. When cool enough, pull and roll into sticks and cut.
For Peppermint Sticks: Add 1 teaspoon of peppermint extract. Divide candy in two parts. To one part add a little red food coloring. Pour on buttered surface; when cool enough, pull each separately, then twist one around the other; form into canes or sticks.
