1 (3 oz.) package strawberry gelatin
¼ cup sugar
1 ¼ cup boiling water
2 cups frozen strawberries (unsugared)
2 teaspoons lemon juice
1 (3 oz.) package cream cheese
1 teaspoon vanilla
2 cups whipped topping
Pour boiling water over gelatin and sugar and stir to dissolve. Add berries and crush lightly as they soften. Include lemon juice. Cool until mixture mounds slightly. Soften cream cheese; beat in vanilla. Gradually add the whipped topping. Use half the cheese mixture for the bottom layer. Spoon half the fruit mixture over it. Add remaining cheese and strawberry layers. Chill at least 3 hours. This pie is equally good with raspberries.
