Sweet Potato Casserole
1 lb sweet potatoes, cooked and peeled
1-1/2 cups of sugar
2 eggs (3 or 4 makes it much richer)
1/2 stick of butter
1/4 teaspoon cinnamon
1/2 teaspoon allspice
Topping
3/4 stick butter
1/2 cup to 1 cup pecans, chopped
1/2 cup brown sugar
3/4 cup cornflakes, crushed
Cut cooked sweet potatoes into chunks for easier blending. Combine all ingredients and beat until smooth. Bake in casserole dish for 45 minutes at 350 degrees then add topping.
Topping
Melt butter; add brown sugar, pecans and cornflakes. Spread over sweet potatoes and bake until crunchy (about 15 mins). Marshmallows can also be used.
