Sweet Potato Casserole
1 lb. sweet potatoes, cooked and peeled
1 1/2 cups sugar
2 eggs (3 or 4 make it much richer)
1/2 stick butter
1/4 teaspoon cinnamon
1/2 teaspoon allspice
Cut cooked sweet potatoes into chunks for easier blending. Combine all ingredients and beat until smooth. Bake in casserole dish for 45 minutes at 350 degrees, then add topping.
Topping
3/4 stick butter
1/2 to 1 cup pecans, chopped
1/2 cup brown sugar
3/4 cup cornflakes, crushed
Melt butter; add brown sugar, pecans, and cornflakes. Spread over sweet potatoes and bake until crunchy (about 15 minutes). (Marshmallows may also be used as a topping-- sprinkle on top of baked sweet potato mixture, then place in warm oven to melt.)
