Fancy Potatoes

1 medium onion, chopped
1/2 cup butter
2 tablespoons all purpose flour
Salt and pepper
5 lbs. new potatoes, boiled and diced
1 8 oz. package cheddar cheese, grated
1 16 oz. container of sour cream
Bread crumbs


Sauté onions for 5 minutes in butter. Blend flour, salt and pepper into onions. Add sour cream, stirring until blended. Remove from heat. Place boiled, diced potatoes, onion mixture and grated cheese in 12x9 baking dish. Mix lightly but thoroughly. Top with bread crumbs and more grated cheese. Bake at 350º for 45 minutes. Serves 8 to 10.
