It’s likely that someone at your holiday table this year is gluten-intolerant, or has adopted a gluten-free diet for better health. To accommodate the needs of your gluten-free guests, you can still make delicious pies for the holidays! Here are three options to make gluten-free crusts to use in your traditional pie recipes:
Gluten-Free Pie Crust
1 cup gluten-free all-purpose flour
1/2 teaspoon salt
1 stick cold unsalted butter, cut into small pieces
1 large egg
2 to 4 tablespoons ice water
In a food processor, pulse flour and salt to combine. Add unsalted butter and pulse until mixture resembles fine meal. Add egg and 2 tablespoons of ice water, and pulse until thoroughly combined. If needed, add up to 2 additional tablespoons of ice water, 1 tablespoon at a time.
Dough can be chilled and stored in the refrigerator until ready to roll out and place in pie pan.
Roll dough out on a sheet of waxed paper and turn into pie pan. Fill shell with dessert filling and bake according to pie recipe.
Pretty Tasty Gluten-Free Pie Crust

1/4 cup brown rice flour
1/4 cup of cornstarch
1/2 cup sweet rice flour*
1/2 teaspoon guar gum
1/4 teaspoon salt
6 tablespoons unsalted butter
2-3 tablespoons water
Mix all dry ingredients. Cut in butter until the mixture resembles coarse crumbs. TIP: I find the easiest and best way is to pulse it in a food processor.
Add egg and enough water to form a ball that’s moist enough to hold together, but not too sticky. Using a rolling pin, roll dough out on a piece of parchment or waxed paper that has been generously dusted with rice flour. Turn into a 9-inch pie plate. Cut off excess, crimp edges and fill with your favorite filling and bake.
*Note: Sweet rice flour is different and a little less common than brown or white rice flour, but you can find it at some grocery stores. If it isn’t available locally, you can purchase sweet rice flour on Amazon. It is sticky, which makes it great for an attractive, rolling out pie crust.
Almond Flour Pie Crust
2 cups almond flour
¼ teaspoon sea salt
2 tablespoons coconut oil
1 large egg
Combine the flour and salt in a food processor and pulse. Add coconut oil and egg. Pulse until mixture is moist and forms into a ball. Press dough into a 9-inch pie dish. Add dessert filling and bake according to recipe.
