Directions:Trim excess fat. Place on a rack in a roasting pan. Rub garlic over roast. Brush with olive oil and sprinkle with herbs. Cover roast and refrigerate for at least 2 hours. Sprinkle roast with salt and pepper. Bake at 500 degrees for 15 minutes. Reduce heat to 325 degrees and bake for 1 hour and 20 minutes.
