Roast Pork Loin

Ingredients
  

  • 1 pound pork loin roast
  • 3 cloves garlic, crushed
  • 3 tablespoons olive oil
  • 2 teaspoons chopped fresh thyme
  • 2 teaspoons chopped fresh rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • Directions:
    Trim excess fat. Place on a rack in a roasting pan. Rub garlic over roast. Brush with olive oil and sprinkle with herbs. Cover roast and refrigerate for at least 2 hours. Sprinkle roast with salt and pepper. Bake at 500 degrees for 15 minutes. Reduce heat to 325 degrees and bake for 1 hour and 20 minutes.
