Goat Cheese Penne with Arugula

Ingredients
  

  • 5 1/2-oz. goat cheese
  • 2 cups arugula, coarsely chopped
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup olive oil
  • 2 teaspoons garlic, minced
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 8-oz. penne pasta

Instructions
 

  • Directions:
    Cook pasta in a large pot of boiling salted water until al dente. Crumble goat cheese into a large serving bowl. Add arugula, cherry tomatoes, olive oil, garlic, salt, and pepper. Drain pasta, and toss with goat cheese mixture.
