Basic Edamame

1 lb. fresh edamame in pods
2 tablespoons salt
Kosher salt to taste

Cut the stems from the ends of each pod. Boil three quarts of water in a large pot, and add 2 tabelspoons of salt to the boiling water. Boil the edamame for 3 to 4 minutes, until softened. Drain the edamame in a colander and place them in a serving bowl. Sprinkle kosher salt over the edamame until well coated.

You can’t eat the pods. You pop them out.

Okay, sounds simple, but you don’t mention HOW to eat them. I have had these in the pod, and it was IMPOSSIBLE to chew the pod. Aside from popping them out of their pods, is there a trick to eating them? I always buy them pre-shelled.

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history.
