Saute in a large saucepan:
1 finely chopped onion
2 tablespoons margarine
1 cup stewed tomatoes, drained and chopped into pieces
2 cups of milk
1 cup pumpkin
2 chicken bouillon cubes dissolved in 1/3 cup hot water
Add salt and pepper to taste. Stir, mixing ingredients. Allow to come to a boil. Simmer, adding more milk if mixture is too thick.
1 tablespoon cooking sherry
Serve hot with seasoned croutons.
