4 cups cooked carrots
1/2 lb. processed cheese, cubed or grated
1 small onion, diced
4 slices bread
3/4 stick (6 tbsp.) butter, melted
Mix carrots, cheese, and onion together and place in a greased 8-inch casserole dish. Crumble bread over carrot mixture. Pour butter over all. Bake at 350°F for 20 minutes or until golden brown.
