Mix 2 cups cooked rice with an 8 ounce jar of Cheez Whiz or 1/2 pound cubed Kraft Velveeta.
Saute the following, adding in 1 stick oleo or butter:
3/4 cup minced onion
3/4 cup chopped celery
3/4 cup chopped bell pepper
1 teaspoon flaked parsley
Add 2 (10-ounce packages) chopped broccoli to sauteed items. Saute until broccoli is thawed. Combine all ingredients with 2 cans of undiluted cream of mushroom soup (or cream of chicken or one of each). Pour into long casserole dish and top with cheddar cheese. Bake 10 minutes at 400 degrees.
