Individual Coffee Crumb Cakes

These individual coffee cakes are the perfect treat to have with a cup of coffee or tea, with Sunday brunch, or as dessert with a tall glass of milk. The buttery crumb topping makes them hard to resist!

Individual Coffee Crumb Cakes


1 ½ cups flour
3 tablespoons melted butter
2 teaspoons baking powder
1 teaspoon grated orange rind
½ teaspoon salt
1 egg, beaten
½  cup sugar
¾ cup milk


Preheat oven to 375º F. Sift dry ingredients together. Combine butter, rind, egg, and milk and add to the dry ingredients, mixing well. Spoon batter into paper cup-lined muffin pans, halfway full.

Variation: For extra deliciousness, add a spoonful of apricot preserves or orange marmalade to the center of the batter before you add the crumb topping, below:

Buttery Crumb Topping

½ teaspoon cinnamon
2 tablespoons salted butter
1 ½ teaspoons flour
½ cup chopped walnuts

Combine until mixture forms rough crumbs.  Sprinkle on surface of batter. Bake at 375º F. for about 20 minutes. Makes 6 large muffins or 12 smaller muffins.
