Cobbler - Ice Cream

Quick Peach Cobbler

Ingredients
  

  • 1 quart sliced peaches.
  • 1 to 1 ½ cups sugar*
  • 1/2 cup butter
  • 1 cup self-rising flour
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1/4 teaspoon cinnamon

Instructions
 

  • Directions:
    Combine peaches and 1/2 cups sugar in a saucepan.  Heat until sugar is dissolved, stirring frequently. 
    Melt butter in 9×13 baking dish in oven.  Combine remaining 1 cup sugar, flour, and milk in a large bowl and mix well. Add vanilla and cinnamon; mix well.  Spoon over melted butter in baking dish.  Pour in peaches.  Bake at 375 degrees F for 1 hour or until brown.  Serve with vanilla ice cream, if desired.
    Serves 10.
    * If your peaches are sweet, you can adjust the sugar in this recipe to your liking.

Have been substituting extra virgin olive oil for
all recipes calling for butter for over a year now. Every one has turned out great and cholesterol is now lower!

Good! We figured that EVOO would be too strong a flavor for sweet dishes but it may work!

Very similar to what I’ve been using for years. 1 can pie filling, 1 stick butter, 1 c SF flour, 1 c milk. Melt butter in iron skillet, pour in well mixed flour and milk, pour can of pie filling over top. Bake at 350 for about an hour, until browned on top. I might add about an 8th c of rum! Tried coconut rum once in the best pineapple upside down cake I’ve ever had!

This is a great recipe. You can double it easily and instead of twice the peaches use a can of pie filling cherries with the qt. of peaches. The mix is beautiful and delicious. It makes a 9″ x 11″ loaf pan. DSR

I have used this recipe to make blackberry cobbler and it is delicious. So easy to make. If you don’t have self- rising flour, be sure to add 1 1/2 tsp baking powder and 1/2 tsp salt to flour. My family loves this cobbler.

Sounds delicious. I’m glad that a reader said that we could get the same great results from canned peaches! Therefore I can make this during the winter also.

I have made this for yrs too, and I want to add that u can do this with canned peaches, if fresh are unavailable. I use O’sage brand peaches, usually comes in halves, I chop them up some, I still melt the stick of butter in the baking pan, put the peaches in, u dont need the sugar here, as the peaches are sweetened when canned, add the batter, made the same way, basically, and then lastly, pour the peach juice over the whole thing. Bake at 350 deg for an hour.

I’ve been using this simple recipe for years with all kinds of fruit and it is by far, my and my families FAVORITE recipe for fruit pies/cobblers. Actually got peaches today to bake this tomorrow…what a coincidence!
