Lemon Whoopie Pie Filling

Ingredients
  

  • 1 stick unsalted butter, softened
  • 3/4 cup cream cheese, softened
  • 2 1/2 cups confectioners’ sugar, sifted
  • 1/3 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • 3/4 teaspoon lemon extract

Instructions
 

  • Using a mixer, beat the butter and cream cheese together at medium speed until fluffy, about 3 minutes.
  • Add the confectioners’ sugar 1/2 cup at a time until combined.
  • Add vanilla extract, lemon zest, and lemon extract and beat until light and fluffy.
