Green Tomato-Pepper Relish


4 quarts green tomatoes
1/2 cup salt
4 green peppers
1 red pepper
4 cups white vinegar
2 cups white sugar
4 onions
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. allspice

Slice washed tomatoes into crock, sprinkle with salt. Let stand overnight. Drain. Rinse and drain. Grind tomatoes, peppers, and onion. Boil vinegar and sugar; add remaining ingredients and boil 5 more minutes. Then simmer over very low heat 2 hours. Makes 3 quarts.
