S’mores Cereal Bars Recipe

Ingredients:

  • 6 cups Golden Grahams cereal (or any honey graham cereal)
  • 4 tablespoons unsalted butter
  • 1 (10 oz) bag mini marshmallows + 1 cup more for mixing
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips
  • Pinch salt

Instructions:

  1. Butter a 9×13 baking dish.
  2. In a large pot, melt butter over low heat.
  3. Add the 10-oz bag of mini marshmallows. Stir until completely melted.
  4. Remove from heat. Stir in vanilla and salt.
  5. Add cereal. Stir to coat completely.
  6. Quickly fold in the extra cup of marshmallows and the chocolate chips. They will partially melt; some chunks should remain visible.
  7. Transfer to the prepared dish. Press flat with a piece of parchment or buttered hands.
  8. Cool 30 minutes until firm.
  9. Cut into 24 bars. Store airtight up to 5 days.

Variations

  • Peanut butter s’mores: add ¼ cup peanut butter when melting the marshmallows.
  • Torched top: press extra marshmallows on top before cooling; torch with a kitchen torch until golden.
  • Caramel: swap chocolate chips for caramel chips.
  • Mint s’mores: add ½ teaspoon peppermint extract and use Andes mint chips.
