Vegan Black Bean and Cornmeal Burgers
Ingredients
- 2 15 ounce cans black beans, rinsed and drained
- 1/2 cup whole wheat or all-purpose flour
- 1/4 cup yellow cornmeal
- 1/2 cup salsa
- 2 teaspoons ground cumin
- 1 teaspoon garlic salt
- toasted hamburger rolls or sourdough bread, baguettes, etc.
- condiments for topping
Instructions
- Place beans in food processor; process until fairly smooth.
- Add flour, cornmeal, salsa, cumin, and garlic salt. Process until well combined.
- Spoon mixture into six balls on a large plate and refrigerate at least one hour or up to four hours before cooking.
- Heat charcoal grill or gas grill or ridged grill pan over medium heat.
- Form each ball into a 4-inch patty about 1/2-inch thick. Place patties on grill or in the pan and cook until browned and heated through, 4 to 5 minutes per side.
- Serve on toasted rolls with your favorite condiments.

Do these freeze well, either uncooked or cooked. I live along, and would like to try these if they can be frozen as I can’t possibly eat 6 burgers.
Marlene – They will freeze just fine. Cooked would probably be be better. Just be sure to separate them with wax paper or similar.
I am on Weight Watchers and I would like to try this. Need nutritional value info.
