Easy Cottage Cheese Pudding
Ingredients
- 1 pound cottage cheese
- 1 teaspoon salt
- 1 tablespoon all-purpose flour
- 1 cup sugar
- 3 egg yolks
- 1 cup milk
- 3 egg whitesnutmeg and allspice
Instructions
- Preheat oven to 350 degrees.
- Mix together cottage cheese, salt, flour, and sugar.
- In a separate bowl, beat egg yolks; add milk and mix well, then beat into cheese mixture.
- Beat egg whites until stiff; fold into cheese mixture. Place mixture into baking dish and sprinkle top generously with nutmeg and allspice.
- Place dish in pan of water. Bake 1 hour in 350° oven.

I baked this pudding tonight, but I used my Ninja food processor to mix it all together. This little recipe creates a cloud-like pudding which is rich and decadent like it is. I topped it with an orange sauce, and it feels and tastes gourmet. My son is a Chef, and he gave this recipe a very high review himself. Next time, I will add the juice and zest of one lemon, and serve it with a lemon sauce, or sprinkle it with lemon sugar.
