Irresistible Peanut Butter Cookies
Ingredients
- 3/4 cup creamy peanut butter
- 1/4 cup shortening
- 1 egg
- 1/4 cup butter (or use 1 full stick of butter for your total shortening)
- 1 1/4 cup brown sugar, firmly packed
- 1 tablespoon vanilla
- 3 tablespoons milk
- 1 3/4 cups all-purpose flour
- 3/4 teaspoon salt
- 3/4 teaspoon baking soda
Instructions
- Heat oven to 375º F.
- Combine peanut butter, shortening, butter or margarine, brown sugar, and vanilla in a large bowl.
- Beat at medium speed until well blended.
- Add egg and milk, and mix.
- In a separate bowl, combine flour, salt, and baking soda. Add dry mixture to wet mix. Mix until just blended.
- Roll dough into 1″-2″ balls or drop by heaping teaspoons 2 inches apart on an ungreased baking sheet, then flatten in a criss-cross pattern with fork dipped in water.
- Bake for 8-10 minutes or until set and just starting to brown. Cool for 5 minutes before removing from pan.

The amount of eggs to add isn’t listed. Can someone please advise?
Yes Jean Perryman, you can use crisco for the shortening or any other, such as one I have used, from Nutiva, coconut shortening.
As I read this new version, I thought, doesn’t have enough peanut butter. I was right. needs more, other than that they were tasty. however my own recipe is much simpler and I will most likely go back to it. thanks for the chance to try something new. : )
