Best Zucchini Bread Recipe
Ingredients
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs, lightly beaten
- 2 tsp. vanilla
- 1/2 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/4 tsp. baking powder
- 1 1/2 cups all-purpose flour
- 1 cup chopped walnuts or pecans
- 1 1/2 cups shredded zucchini (about 1-2 medium zucchini)
Instructions
- Preheat oven to 350°F.
- In a mixing bowl, combine oil, sugar, eggs, vanilla, baking soda, cinnamon, salt, and baking powder.
- Beat on medium speed approximately 30 seconds until ingredients are blended.
- Add flour and mix until moistened. Stir in nuts and zucchini.
- Pour batter into a greased and floured loaf pan.
- Bake approximately 65 to 75 minutes or until loaf is done.
