Best Zucchini Bread Recipe

Ingredients
  

  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 2 tsp. vanilla
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. baking powder
  • 1 1/2 cups all-purpose flour
  • 1 cup chopped walnuts or pecans
  • 1 1/2 cups shredded zucchini (about 1-2 medium zucchini)

Instructions
 

  • Preheat oven to 350°F.
  • In a mixing bowl, combine oil, sugar, eggs, vanilla, baking soda, cinnamon, salt, and baking powder.
  • Beat on medium speed approximately 30 seconds until ingredients are blended.
  • Add flour and mix until moistened. Stir in nuts and zucchini.
  • Pour batter into a greased and floured loaf pan.
  • Bake approximately 65 to 75 minutes or until loaf is done.
