Potato Kale Soup

Potato Kale Soup

1 medium onion, chopped
4 cloves garlic, chopped
5 cups chicken or vegetable broth
1 medium carrot, sliced
1 cup diced celery
2 red potatoes, diced into 1/2-inch cubes
3 cups kale
2 teaspoons dried thyme
2 teaspoons dried sage
Salt and pepper to taste

Rinse kale, remove stems, and chop into fine pieces. Heat 1 tablespoon broth in a medium soup pot. Sauté onion in broth over medium heat for about 5 minutes, stirring frequently. Add garlic and continue to sauté for another minute. Add broth, carrots, and celery and bring to a boil on high heat.
Reduce heat to a simmer and cook for another 5 minutes. Add potatoes and kale, and cook until potatoes are tender, about 15 more minutes. Add remaining ingredients and cook another 5 minutes.

    Both the chowders, clam and potato kale need the # of servings…all recipes do…but especially large amounts…or expensive ingredients…like clams and 3 cans of store bought soup and butter & creams! Evaporated canned milk can likely be substituted for the creams; but it is costly in many stores. Sounds great tho and easy.

  • If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1919, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
